Crunchy - topped haddock
Ingredients:
- 1 tbsp olive oil plus extra for drizzling
- 4 skinless haddock fillets
- 2 handfuls of cherry tomatoes
- 3tbsp mayonnaise
- 1 tsp garlic paste or 1 garlic clove crushed
- 100g / 4oz white breadcrumbs
- Zest and juice 1 lemon 2 handfuls of fresh flatleaf parsley roughly chopped
- Takes 25mins serves 4
Method:
Preheat the oven to 220c / gas 7 fan 200c lightly oil a large baking tray then lay the haddock and tomatoes alongside each other. In a small bowl mix the mayonnaise with garlic paste or crushed garlic. Then spread evenly over the fish.
In a separate bow; toss together breadcrumbs, lemon zest, juice and parsley and season to taste. Top the fish with breadcrumbs mixture. Drizzle olive oil over the fish and tomatoes and bake for 15mins
