Homemade Seafood Chowder

Ingredients:

  1. 2 1/2 lbs of assorted fish (salmon, cod, haddock, mussels & prawns etc)
  2. 1/2 Pint of fish stock
  3. 1/2 Pint of Milk
  4. 2 Ozs Butter
  5. 2 Ozs Flour
  6. 1/2 lb diced potato, mushroom and onion.

Method

  1. 1. Cut the fish into large cubes
  2. 2. Steam the fish for 5 mins
  3. 3. Steam mussels for 2 mins (keep stock)
  4. 4. Gently fry potatoes mushrooms & onions in butter
  5. 5. Add flour and cook out for 5 mins
  6. 6. Add stock the milk. Simmer gently for 10 mins
  7. 7. Add fish, salt and pepper
  8. 8. Simmer gently for 10 mons. Garnish with chopped parsley.
